Rosemary Breadsticks

Rosemary Breadsticks or Grissini are the Italian style of long, thin, crunchy breadsticks. Perfect to accompany an anti pasta platter, these homemade breadsticks are full of flavor and crunch.
Turning on your oven and baking bread on a hot, summer day may not be the first thing that comes to your mind this August, but we hope this list of breads made with all of Summer's Bounty will inspire you to do so in spite of the heat. Make these breadsticks that only take 15 minutes to bake and you won't even notice the slight rise in temperature in your kitchen.
I often purchase packages of grissini-- long, thin, crunchy, Italian style breadsticks-- for my sons and thought it would be fun to show them how to make something similar right in our own kitchen.
Well...I'd like to report that my let's-have-time-together-baking idea went off without a hitch, but no. Reality struck instead. My younger son, who nearly always perks up when we bake, had absolutely no interest today. And my older son, who usually runs the other way when ingredients come out of the pantry... still ran the other way.
So it was just me.
I quickly cut fresh rosemary from our small herb garden of container pots on the deck, measured all the ingredients out and added them to the stand mixer, let the mixer do all of the work and a smooth round of dough appeared without much effort and very little time.
The dough rested while we left the house on one errand. When we returned it took 5 minutes for me to roll it out, cut the dough into slices and form the breadsticks. Another hour of rising time with a second outing meant that these breadsticks were created with very little hands-on time and hardly any moments taken away from the morning with my boys.
The recipe is from King Arthur Flour's website: Crunchy Breadsticks- Grissini . I added rosemary since my container pots are overflowing right now; any combination of herbs, seeds, or cheese would be lovely too and there is nothing wrong with simply plain, unadorned breadsticks. Wrap with prosciutto or serve with olive oil and balsamic vinegar.

It would be work cranking the AC and turning on the oven to smell these wonderful breadsticks. I can only imagine! Yeast bread combined with rosemary...it must smell like heaven! I will have to make these SOON.
Yes, the house smelled so good especially with the rosemary-- one of my favorite herbs for baking and cooking.
rosemary and olive oil, a delicious combination. Breadsticks look just too tempting.
What a great idea, these look like a fantastic way to get your bread fix without having to have the oven on for so long!
I'm sure they didn't run the other way when those breadsticks were ready to eat! They look delicious and would be perfect with a meal or sitting out when entertaining guests. It's great that you give your children the opportunity to help in the kitchen. I loved baking with my grandmother and know people that don't cook because they were never allowed in the kitchen.
On some days it is the same thing in my house too. The teen wants a cookie but doesnt want to bake with mom. Sigh! But hey I am sure theu turned back your way once these were ready. Love the beautiful and fresh grissini.
There is a children's book called The Little Red Hen and the dear Hen asks for help throughout the baking process and no one will lend a hand. In the end she has many takers who want a piece of her bread but she eats it by herself! I have thought of that sweet story a lot lately. : )
I am very lucky because a few years ago we got an outdoor grill that has an oven attached so there is no reason for me not to make these great looking breadsticks.
An outdoor oven and grill sounds exciting. I really did not use the grill this summer but there are a few weeks left to remedy that!
You sure make these sound easy...easy enough that even without a couple of boys waiting on the end result that I might have to make them for ME! 🙂
I'll make some with you in mind next time Barb. We'll have to get together soon.
We can have any leftovers if you don't want to eat them all 🙂
The kiddos would love these!
I think you need to keep all of that gorgeous grissini to yourself =) So tasty sounding!!
Sounds good to me!
These a prefect to have with a bowl of soup.
Yes, soup with breadsticks would be nice!
wish I had these to snack on right now
Thanks, Mireille, I have frozen the extra and hope to warm them up a few at a time over the next few weeks.
I love a good breadstick with spaghetti! Yum!
Yes, breadsticks and spaghetti would be delicious! I will have to plan ahead next time and have a bowl of pasta ready to go.
Your experience in trying to bake with your boys made me laugh, Holly. When my girls were little, they were often in the kitchen with me, eager to help. But there were days when I was definitely on my own. I'll bet your boys were right there when your beautiful breadsticks came out of the oven though! Nothing like the smell of baking bread to draw a small crowd.
My boys are back to school this week, Stacy, and I miss their presence at home. I do not miss the whining...but I do miss my little buddies! I'll have to bake something to surprise them with this afternoon.
I love rosemarry because of its unique freshness flavor.. I am gonna try this for sure
Thanks, Priya, I hope you like these breadsticks!
I love having rosemary in the garden, it's such a lovely herb and it's always there when you need it. These look lovely.
I think so too, plus it is a tough herb and seems to survive anything-- a storm, bad weather, and my poor gardening skills!
Rosemary is such a great choice for breadsticks since the flavor is one that will shine through even in small amounts.
Perfectly baked Grissini. Rosemary sounds like the perfect addition to them.
Lovely rosemary breadsticks, would be great with a bowl of soup.
yummy and crispy bread sticks.........
