Here is the original recipe for simplified summer berry parfaits from Whole Foods. I love their trick of adding lemon curd to the freshly whipped cream. The lemon curd adds such a brightness and pop of flavor to this parfait. Now, this is not a low-fat dessert thanks to the freshly whipped cream. If you’d like a healthier version try using Greek yogurt. Add granola along with the Greek yogurt and you will be ready for breakfast or dessert, whichever you choose.
- 2 cups heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1 cup lemon curd
- 6-8 oz fresh blueberries
- 2-3 peaches sliced
- 2-3 nectarines sliced
- 1/4 cup crushed pistachios (optional)
- Whip heavy cream until it begins to thicken. Add sugar and vanilla and whip until peaks form. Fold in lemon curd and refrigerate until ready to use.
- Just before serving, alternate layers of fresh fruit with lemon cream in glasses or bowls. Sprinkle with crushed pistachios, if desired.
