Cake cones are as straight forward as the name sounds– bake cake inside an ice cream cone. This idea of baking cake cones is far from original—the directions were right on the Joy Cones box—but cake inside ice cream cones still make kids smile every time I make them so I thought it was worth sharing here. I’ve made cake pop ice cream cones as well as mini cupcake cones and this time around I made cupcakes in the regular size cone.
The directions are easy: mix the batter according to the box directions then pour into your cones. Only fill the cones 1/3 – 1/4 of the way full. It is easier to ice the cones later if the cake is not too far above the top of the cone. Bake at 350 degrees F for about 15-20 minutes.
I had luck keeping the cones upright by adding long strips of aluminum foil to my 9 x 13 baking dish. The box directions suggest wrapping a circle of aluminum foil around each cone and placing them in muffin tins, an idea that sounds promising too.
You can fill the cones with batter by the spoonful or I tried something new in my kitchen and used a water bottle.
After the cake bakes in the cones, let them cool completely then add your choice of topping. I made these with a swirl of icing to give the look of soft serve cones. Another idea is to combine the cake and ice cream by simply adding one scoop of ice cream on top. Make sure your ice cream scoop is about the same size as the top of the cone then add your ice cream to the cake. I think the ice cream topping is a fun way to serve ice cream and cake at a child’s birthday party. No bowls, no spoons, but have a napkin nearby or eat quickly before the ice cream drips!
