My son LOVES the Apples ‘n Green smoothie at Jamba Juice. Have you tried it? It combines a hearty vegetable juice with bananas, mangoes, and peaches. I have to admit it is not a flavor combination that I’d order as my first choice, but I am excited that my son thinks it is the best smoothie in the store. We have been trying to create a similar experience at home and our Vitamix is up to the challenge. The ingredients in this Go Green Smoothie are not a mirror image of those at Jamba Juice, in fact, they have few items in common. The goal in our kitchen was to make a green smoothie that my son would drink happily—did I mention that he is the pickiest eater I know?? Yes, this would be a challenge but after a number of experiments we settled on this green smoothie and it is a winner!
Ingredients:
1/4 cup baby spinach leaves, loosely packed
1 green apple, cored (leave on skin)
1 banana
1/4 melon (honeydew)
a few sprigs of parsley
1/2 cup ice
Blend all ingredients together to desired consistency. We prefer this completely smooth and the Vitamix made quick work of the job! And look, my son is drinking the smoothie and smiling! Hooray!

ReplyDeleteThanks, Karen! I am not sure why he'll drink green smoothies yet he has never eaten any meat, whole fruit or vegetable in his life...and he is nearly 8! We'll keep working on the smoothies and hope that leads to eating "real" food someday.

You are right! Children defy all logic. This is a child who eats cereal for every meal yet he will drink green smoothies. Go figure!
