Pumpkin Butter in the Crock Pot

Let’s hang on to fall flavors just a bit longer, shall we? You’ve seen loads of canned pumpkin at the grocery store and there is more to it than pumpkin pie. Stock up on a few extra cans before they disappear. Better yet, start with a (real!) pumpkin, roast it and then puree it to use in this recipe and many others. Some pumpkins are better for cooking than others. The small, pie pumpkins are suitable for cooking. Neighbors of mine gave us a few pumpkins from their garden which again confirms that food grows without trouble in Colorado and the fact that nothing grows successfully at my house is a reflection on me and not the soil/altitude/weather/etc. Maybe I’ll have better luck next year but I’ll choose kind neighbors over a plentiful garden any day! I knew I wanted to use their pumpkins in the kitchen to return the favor. I started with this pumpkin butter and also made a pumpkin bread. They were happy to see their garden labor transformed into such goodies!

To make a pumpkin puree I followed The Pioneer Woman’s lead, click here for more details. It didn’t take much effort and was very satisfying to end up with homemade puree. The crock pot does the remainder of the work to cook the puree, along with some sugar and spices, down to a smooth and flavorful butter-like spread.

Ingredients:
3 cups pumpkin puree
1/2 cup brown sugar
2 teaspoon cinnamon
1/4 freshly ground nutmeg
1/4 teaspoon salt

Directions:
Put all of the ingredients into the crock pot. Cook on low for 3-4 hours.
Refrigerate for up to 2 weeks.

  2. I can't grow a thing either. Always the optimist, I bought 2 concord grape vines and planted them hoping for grapes and homemade jelly for next year. I'll let you know how that goes. This looks just wonderful. I can almost smell the pumpkin.

    1. Oh grapes sound great! I have neighbors on either side of me who grow grapes. Me, not so much! I am sticking with a potter herb garden but always have high hopes for trying something more.

    1. I hadn't tried pumpkin butter either until my mom gave me some pumpkin butter from Williams Sonoma last year and I knew I could make it at home this time around. Thanks for stopping by!

  4. I have grown a full garden in years when my kids were living at home and as you know...have planted a TON of stuff in my yard. The secret is simple...amend, amend and amend your soil some more and then put in plants for the region. Home Depot sells plants meant for the southeast; they simply won't grow here! I know you can do it but that amending the soil business? Can take a couple of years before the clay is really anything close to soil so don't give up!

    You're hanging onto fall like I did summer...and I'm OK with that! Sounds lovely, would love some on an English muffin!

    1. Hi Bridget, I think you'll love having the convenience of a crock pot. I tend to go for basic designs-- no frills. I think it's nice to have the type of crock that easily lifts for cleaning. Even better if it can go in the dishwasher. I don't have a timer or delay function on mine but see that it would be useful to set the crock pot to start mid-morning and then be ready after returning home from work. I have a model like this one http://www.target.com/p/crock-pot-slow-cooker-4-5-qt/-/A-13796571#prodSlot=medium_1_7&term=slow cooker 33511 which only costs $20 but you can spend far more for fancier models. Let me know what you choose!
