Ingredients:
1 TB chile powder
1 TB cumin
1 TB smoked paprika
1 tsp garlic powder
2 chipotle peppers, minced
1 can of green chiles (4 oz)
1 can diced tomatoes (14.5 oz)
1 can tomato sauce (15 oz)
1 can chicken stock (14.5 oz)
1 red bell pepper, diced
1 small onion, diced
2 boneless, skinless chicken breasts
2 tortillas & cooking spray
Directions:
Combine all of the ingredients except for the tortillas in the crock pot. Yes, it is as easy as that! Let the soup cook for 4 – 5 hours on low. Remove the chicken breast and shred them with two forks then add the chicken back into the crock pot.
Cut the tortillas into strips and spray with cooking spray. Bake at 350 for 8-10 minutes until lightly browned.
Ladle the soup into bowls and top with the tortilla strips.
