Try this grilled corn the next time you fire up your charcoal grill. I checked out a recipe from Bon Appetit for grilled corn on the cob to understand the basic method. There are only a few steps to take to create this side dish.
First, remove the dark green outer leaves of the husk. I had never looked closely enough to realize that there are so many layers!
Next, carefully pull back the lighter green leaves of the husk and remove as much of the corn silk as possible.
Close the husk around the corn again (it won’t completely stay put but that is fine) and soak the corn for at least 10 minutes.
Before placing the corn on the grill, shake off the water and brush the corn kernels with a touch of olive oil. Add salt and pepper if you wish.
Grill on a hot charcoal fire for about 10-15 minutes, turning the cobs every 5 minutes or when the husk looks charred.
I surprised myself by not needing to add butter to the corn before eating;the olive oil gave it plenty of flavor. Usually my favorite part of corn on the cob is the butter so this is a healthier way for me to enjoy corn this summer.

Years ago a friend of mine made corn like this for a bbq she was having. I had totally forgotten all about this method. With our great corn this time of year I am going to put this recipe to work.
