There is a certain pleasure to enjoying homemade goodies that you know are a step above those you could buy off the grocery store shelf. Last week I made pesto and roasted red peppers. I’ve been enjoying them in pasta and today made a restaurant-worthy lunch: this turkey sandwich with roasted red pepper and pesto. Delicious!
Simply spread the pesto on the slightly toasted bread, layer the turkey and red peppers and you have a lovely sandwich. My next step might be to add a thin slice of cheese and to make a panini out of this combination. The tasty possibilities go on and on!
