Just in time for Cinco de Mayo here is a recipe for a delicious guacamole. I found the original recipe on Oprah’s website a few years ago with the mango guacamole created by Chef Rick Bayless. The addition of mango to the usual ingredients like avocados, red onion, and lime elevates this mashed up dip to a specialty all of its own. This guacamole will become an instant favorite and you’ll wish avocado season lasted all year long!
Ingredients: (see the link above for Chef Bayless’s exact recipe, mine is slightly different)
1/4 of a red onion (diced)
1 jalapeno (seeded and finely diced)
1-2 TB lime juice
a pinch of salt
1. Set the avocados aside and first prepare the other ingredients. You won’t want your avocados to sit waiting while you get everything else ready as they are prone to discoloring rather quickly without the addition of the lime.
2. Dice the mangoes, the red onions, the jalapeno and toss together with a pinch of salt.
4. Combine all of the ingredients by folding the avocado with the chopped ingredients.
There are a variety of suggested ways to store guacamole such as leaving the pits in the bowl with the guacamole but I have the best luck when I cover the guacamole with plastic wrap that I’ve pushed down and around the dip such that there is little space for the air to react with my avocados.
