The dictionary definition of “macerating” as regards fruit is straightforward. It means to let the fruit sit and soak in liquid such that they soften. The liquid could be alcohol or, as it is here, orange juice and sugar cause the breakdown of the fruit. Even just sugar on its own could be used with success.
Macerating berries is so simple and easy that, in my opinion, it’s often passed by for fancier desserts. Let this simple technique of combining sugar and berries together, then letting them sit for a bit, change your mind. A recipe is hardly needed but I looked one up anyway to make sure my ratio of fruit to sugar was on target. Here is the link to Bon Appetit’s macerated berries with cream. I liked the addition of orange juice to add a bit of bright citrus flavor to the berries. Some orange zest would be nice as well.
Ladle the macerated berries over cream, ice cream, pound cake, angel food cake, or whatever suits your taste buds. This is a simple dessert but don’t be surprised when you want to go back for seconds!
Ingredients:
(I only made half of the version in bon appetit)
3 cups of mixed berries
a heaping 1/4 cup of sugar
1/8 cup of orange juice
Mix the ingredients and let sit at room temperature for about 2 hours.
